That’s right – these appetizers have bacon, and pork, and cream cheese! Pure decadence, but oh so good!!
We decided to grill some boneless, thin sliced pork chops last night and had a few slices of pork left over. A quick look in the refrigerator to see what else we had on hand yielded some bacon and cream cheese so we set off to make this simple treat. You could make this with chicken in place of the pork, or even use a sturdy vegetable such as zucchini or eggplant. The bacon covering protects the cream cheese from melting on the grill and imparts a smoky, rich, wonderful taste!
These would be great to serve as appetizers while grilling the main dish at your next cookout. You can even assemble them ahead of time, cover and refrigerate until it’s time to fire up the grill. Try them and let us know what you think!
Bacon, Pork and Cream Cheese Rollups
12 slices bacon, cut in half
2 thin sliced boneless pork chops
3 ounces cream cheese, cold
Sprinkle the pork chops with salt and pepper and then cut into pieces (about 1 ½ – 2 inches). Cut a small cube of cream cheese, place on top of the pork and then wrap with a slice of bacon, securing with a toothpick. Grill over medium high heat for 2-3 minutes on each side.
